In Golden Bay you can stumble on the most fascinating things, like Pupu Springs, the largest springs in NZ.
Despite its unfortunate name the water is as clear and as pure as you can get anywhere. Look at its extraordinary colour!
What Golden Bay really is about is golden beaches. These ones are near the village of Pohara. Since it was August when I visited I pretty much had them all to myself.
Time to revisit New Zealand again, this time the tip of the South Island, or more precisely, the Golden Bay area. Think of it as the Byron Bay of the South Island, only on a much smaller scale and probably how Byron was 15 years ago. Why? It’s the sunniest/warmest place on the South Island, is by the sea, and has a thriving alternative lifestyle community. But unlike Byron, which is accessible from Brisbane or the Gold Coast, this place is more isolated, accessible only via a dodgy mountain pass!
With cupcakes baked, we began the all important bit – decorating!
There was a choice of marzipan and butterscotch icing, and 3 types of chocolate, along with other goodies.
Some people took decorating very, very seriously.
Me, I found that I have no patience for really fiddly things, so my cupcakes turned out a bit, er, dodgy. But there were some that looked great and rather professional.

It’s kind of funny reading back over the X-Files stories, because I wrote these about 13 years ago while I was still at uni, when X-Files was all the rage. Now David Duchovny’s doing nothing much, and Gillian Anderson’s on the London stage with Toby Stephens… Times have changed.
But nothing is so glorious as red tulips en-masse, as seen in Canberra’s Floriade or the Southern Highlands each year.
Our teacher didn’t really spend too much time over the making of the batter, but I know how important it is to get it to the light and fluffy stage after having a few disasters.
Then all that’s left is to spoon the batter into the cases, with the help of an ice cream scooper. Good trick, that.
Spring is also the beginning of azalea season. They’re always lovely and bright.
But what we were at Sparkle Cupcakery for is, of course, cupcakes. There was a delectable selection at the shop.
However we came to create them. Later, you’ll see how close we got.
